Gavyashree Natural Gulkand Process

Gavyashree Gulkand is a sweet preserve that has been enjoyed in Indian households for centuries. It is made by combining Damask rose petals with sugar (in this case, Mishri or desi khand). This process results in a delicious and aromatic mixture that can be used in various ways.

To make Gulkand, start by washing and drying two cups of Damask rose petals. Take a clean and dry glass jar and add a layer of rose petals at the bottom. Next, add a layer of Mishri (desi khand) on top of the rose petals. Continue layering the rose petals and Mishri until the jar is filled. Finally, add a tablespoon of lemon juice and a quarter teaspoon of cardamom powder to the jar, and stir the mixture well.

The jar should be covered and left in direct sunlight for six weeks, stirring the mixture once a day. Over time, the sugar will dissolve, and the rose petals will release their fragrance and flavor into the mixture. Once the Gulkand is ready, it can be stored in a cool, dry place and enjoyed for up to six months.

Gulkand can be eaten on its own or used as a sweetener in various dishes, such as milkshakes, lassi, ice cream, and baked goods. It is also believed to have several health benefits, such as improving digestion, reducing acidity, and cooling the body. Overall, Gulkand is a versatile and delicious treat that can be enjoyed by all.
